I couldn’t see any noise with the photo from EM5 (but I’m not an expert, like your self) but the Fuji gave just what you said, a watercolour effect, and I spot it, not very impressed.
It much be very difficult to look through the large quantities of high quality DSLR’s available, but does every camera (of the same model) give exactly the same results, should you not be looking look at several examples of the same model (to see if it satisfies your requirements). Lets face it a camera is an electronic device and electronics do vary.

Hi Ian, before I purchased the XT1, Dave who also replied on this post sent me some RAW files and I was able to convert them without issue – no effect. Having seen all the replies on this page plus other reports, I can confirm the water colour effect is down to the RAW converter. I will have more interesting findings to share soon.
